There is the first-aid station on Main Street, and the larger shops (like Emporium) have bandaids, aspirin, and other medications behind the counter. The guns in the Jungle Cruise don't have real bullets, but I bet if you fired one while it was in direct contact with a zombie's head that would do the job. You could also take the spears and shields from the animatronic natives. You didn’t mention where to go to get supplies if you are injured.
